Roast Chicken Recipe... fron AUnty Jackie

Recipes..
This is the roast chicken i used to like it so much when staying with my aunt during University days..

Roast chicken:
1 medium size chix about 1 1/2 kilos
1 heap teaspoon salt, pepper and 5 spice powder ( all mixed together)
1 teasp black soya sauce ( thick type)

Method:
After the chix is cleaned, leave to drip dry.
Rub black soya sauce all over chix, leave to drip dry again.
When almost dry, rub the mixed spices and leave for about 1 hr. If not enough time, 30 mins will do also. Put more spices in the inside of chix.
Heat oven at 200 C until the oven light goes off. This means oven is ready at the right temperature. Put chicken on a rack in a pan with the breast side facing up. ( if you don't have the special chix stand that I used) Roast for 20 mins. Then turn chix with the back facing up for another 20 mins. If chix is big, about 2 kilos, then roast for about 10 mins... total of 50 mins. To test if chix is cooked, pierce the chix between the body and the thigh with a skewer or a small sharp knife and if ready, a clear liquid will flow out; if bloody, then it's still not properly cooked. Cook for another 5 to 10 mins.
